Kohlrabi

A relative of broccoli, kohlrabi's sweet crunch is  good cooked or raw.

 

  • Cut into slices for dipping with celeriac and carrots.
  • Grate it raw in salads or make 'kohlslaw'
  • Boil and mash with potatoes
  • Make kohlrabi hash browns.  Peel and grate.  Mix with bread crumbs, egg, and spices to taste.  Heat oil in a large skillet.  Form mixture into patties and cook in a large skillet until browned.  Flip and brown second side.  Serve with yogurt or sour cream.
